Hatfield Lakes and a Caramel Bundt.

A beautiful cabin for half the price… sure!

We purchased an offer on Groupon to try out a lake cabin retreat at Hatfield Lakes which is about an hour and a half south of Des Moines near Creston. We were celebrating Chad’s birthday and had four of our friends join us. Here are some of the pictures of our weekend.

Oh… and the recipe for the caramel bundt  which I received from my friend Shannon. The “bundt” was actually made in an angel food pan.

What did you expect? We were roughing it!  The recipe is quick, easy, and delicious! Enjoy!

CARAMEL BUNDT 

3 tubes buttermilk biscuits

cinnamon-sugar

1 cup ice cream

1 cup brown sugar

1 stick butter

pecans (optional)

Put pecans in the bottom of a greased bundt pan. Separate biscuits and flatten.

Dip in cinnamon-sugar. Place vertically in the bundt pan. Pour remaining cinnamon-

sugar over biscuits.

In a small saucepan, over low heat, combine the butter , brown sugar and ice cream.

After the biscuits have been placed in the bundt pan, pour the caramel mixture over

the biscuits.

Bake at 350 degrees for 30 minutes.

Remove from oven and let sit for 10 minutes before turning out onto a large plate.
