Whenever I think of risotto, I instantly think of Gordan Ramsay yelling “Where is my ris-zot-tah” on Hells Kitchen. Well I think even Gordon would even be proud of this risotto. Our friends Amy and Jack gave us this great cookbook for Chad’s birthday. It is a vegan cookbook called 1000 Vegan Recipes. Amy is not trying to convert us, she just loved the recipes she has tried and thought we would enjoy it also. I am always appreciative of any new cookbook. My first attempt I found artichoke risotto. I had a can of artichoke hearts and some aborio rice in the pantry so I thought I would give it a try. It turned out amazing. So creamy with just a hint of artichoke flavor. I also paired it with a simple salad with beets, Gorgonzola, and walnuts with a balsamic vinaigrette. Mmmm… so yummy!
