Finnish Oven Pancake (Kropsua)
My friend Morgan sent me a Tik Tok video of this quick and tastly recipe courtesy of @jbraski in Minnesota.
I thought I would make it.
Finnish Oven Pancake (Kropsua) – @jbraski
4 Tbsp butter – 4 eggs – 1/2 tsp salt – 1/4 tsp cardamom – 1 tsp vanilla – 2 1/2 Cups milk – 1 1/2 Cup flour
Preheat your oven to 425 degrees F. You’ll need a 9×13 pan. Place the butter in the 9×13 pan and put in the oven to melt while it preheats.
In a mixing bowl, crack the 4 eggs and whisk, stir in salt, cardamom, vanilla, and milk. Then, add the flour to the mixture. Take out the hot pan with the melted butter. Pour in the batter. No need to stir. Cook for 25 minutes. Enjoy watching it puff up in the oven.
I served with butter and maple syrup for the first slice. The second, I added lingonberry jam, raspberries, and blueberries. Whipped cream would also be a great choice. Quick, easy, and delicious.
